An 80 year old Nonna’s recipe, straight from the Bologna Chamber of Commerce. This is seriously authentic, better-than-your-average bolognese. Pancetta sautéed until crispy with a soffrito of onion, celery, carrot then slow-cooked with pork mince, beef mince, red wine, milk, passata and herbs. Enough sauce to serve a family of 3-4pp (generously).
Reheating: Defrost and transfer to a covered saucepan, then slowly simmer until piping hot. Or, simply reheat in a microwave. Best enjoyed with your favourite pasta.
Ingredients: Pork (mince & pancetta), beef mince, red wine, tomatoes, milk, celery, carrots, onions, butter, olive oil, nutmeg, salt, pepper.

Slow Cooked Yellow Beef Curry
Tender cubes of beef, slow-roasted until fork-tender in a medium-heat Thai yellow curry paste with coconut milk, fresh ginger, onion and baby potatoes.
Reheating: Defrost and transfer to a covered saucepan, then slowly simmer until piping hot. Or, simply reheat in microwave. Serve with your favourite rice.
Ingredients: Beef, yellow curry paste (herbs/spices, soybean oil, shrimp paste), olive oil, onions, kaffir lime leaves, curry leaves, garlic, ginger, coconut milk, beef stock, fish sauce, snow peas or Thai eggplants, salt, Thai basil, red chillies.
