





Slow Roasted Eggplant & Chickpea
Freshly diced eggplants are sauteed until soft and tender, then folded through chickpeas, tomatoes, dates and a host of tasty aromatics until richly developed and flavoursome. A rich, robust, meat-free delight best served with rice, quinoa, couscous… or whatever else you might like to mop up the goodness with.
Serves: 2-3pp
Reheating: Defrost and transfer to a covered saucepan, then slowly simmer until piping hot. Or, simply reheat in microwave. Serve with your favourite rice.
